1 Artichoke
1/2 cup bread crumbs (like you would use to bread chicken)
1/2 cup grated parmesan cheese
4 cloves garlic - finely chopped
1/4 cup oil
salt and pepper to taste
parsely to taste
- Cut top and bottom from artichoke. Turn upside down and mash slightly to open leaves (then turn it back over :o).
- Mix all other ingredients except the oil.
- Fill each leaf on artichoke with stuffing from outside (a spoon works nicely to lever a leaf open, if need be, and to put in the stuffing).
- Pour oil over the stuffed artichoke.
- Wrap artichoke in foil to about 3/4 of the way up.
- Steam artichoke in water for about 45 min to 1.5 hr (lemon juice in the water will keep the artichoke from browning).
- Done when leaf pulls off easily.
- Serve with melted butter.
