Moist and chewy, these are my favorite cookies. And since they are made with oatmeal you can eat them for breakfast.
Ingredients:
1 1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon cinnamon (I just dump lots in ... I love
cinnamon)
1/2 teaspoon salt
1 egg, lightly beaten
1 cup sugar
1/2 cup melted shortening (I use butter, unsalted works
best for baking)
1 tablespoon molasses
1/4 cup milk
1 3/4 cups uncooked oatmeal (get the quick cook
oatmeal...NO instant oatmeal)
1/2 cup raisins, dried cranberries, or both (never an
option with oatmeal cookies)
1/2 cup chopped nuts (optional)
Preaheat the oven to 350 degrees F. Mix the flour,
baking soda, cinnamon, and salt in a large bowl. Stir
in the remaining ingredients. Arrange by teaspoonfuls
on unbuttered cookie sheets and bake until the edges are
brown (about 10-12 min). (I sometimes chill the dough
for a few hours before spooning onto the cookie sheets and
bakeing. It helps to make the cookies more cake
like.)
